PINOT NOIR 2017 | RUSSIAN RIVER VALLEY ($12/$28)
Our 2017 Pinot Noir is lush and rich, with maraschino cherry, black plum, and forest floor. The palate show more red cherry, lightly toasted coffee that is brought together with a balancing acidity and freshness. Soft tannins are present on the long finish.
CABERNET SAUVIGNON 2017 | N.C. ($12/$28)
Ruby red color with brilliant clarity and uniform legs falling down the glass. Aromas of dewy rose petal, black cherry, rhubarb, and sautéed red bell pepper are nicely mated with the slight vanillin oak dressing and allspice in the bouquet. Silky entry into mouth, followed by refreshing but restrained acidity that enhances the red fruit flavors, giving the mid-palate some grip and delineation. The finish is dry but smooth and gives the impression that early-drinking and cellaring are both possible, especially with companion salty cheeses and grilled meat.
CABERNET SAUVIGNON 2017 | NORTH COAST ($10/$26)
Intense aromatics with blackberry compote, black olive, and tobacco leaf. The fine tannins are woven in with black cherry, naking cocoa, and anise on the palate. This wine finishes strong with rich fruit and lingering structure.
CABERNET SAUVIGNON RESERVE 2017 | SONOMA COUNTY ($12/$30)
Premium grape growing, perfect soil, and ideal weather, come together in our Reserve Cabernet. Heady aromas of cassis, chocolate, and leather can be found mingling with vanilla and dried cherry on the palate. Velvety tannins make this wine approachable now, adding complexity breadth across the palate. The finish is long and decadent, throwing more dark fruits and cedar.
ALLIN | RED TABLE WINE ($10/$25)
Multi vintage blend tracing our wine-making history from 2014 thru 2018. Produced as a single cuvee taking many a small lot into account, the AllIn is driven by Cabernet Sauvignon, Merlot, and Petit Verdot, with minor roles played out in the nose and mouth by Chambourcin and Malbec. Deep garnet core and rim show youth, however, the blend produced a bouquet of cherry, tobacco, dry dark chocolate, and dried leaves lending a mature, savory spirit to the blend. More Chianti than Bourdeaux in the mouth, flavors of spice, berry, and meatiness persist throughout and make the wine an obvious choice for everyday drinking with a variety of foods and cheeses.
TWENTY FIFTEEN BDX | 2015 (12/$32)
Very dark appearance in core and rim, with great clarity and obvious richness in wine legs that fall uniformly and slowly from the rim of the glass. Ripe plum, blackberry, dry chocolate, and black licorice predominate in the nose and mouth giving the wine abundant fruit and savory weight when tossed from side to side n the palate. With some aeration hints of dried floral potpourri and tobacco leaf pop out and press the flavors towards more earthly components of the wine. Multidimensional for food pairing…Blackened fish, seared meat, aged hard cheeses would all marry well with the Twenty-Fifteen BDX.
ROSÉ 2018 CAB SAUVIGNON | N.C. ($10/$23)
Salmon-colored rosé with a nuanced bouquet of savory herbs and spring stone fruits. Smooth mouthfeel with flavors of early-season strawberry & Bing cherry finished and a smooth balance of acidity and citrus sweetness.
ROSÉ 2018 ZINFANDEL | DRY CREEK VALLEY ($10/$26)
This beautiful pale pink, “dry” rosé is bursting with strawberry, honeydew, and key lime aromatics. The palate is crisp, and vibrant showing more citrus notes. There is a lingering pale strawberry note on the clean finish.
CHARDONNAY (UNOAKED) 2018 | N.C. ($10/$25)
Light pale green hue in appearance followed by aromas of citrus fruits and McIntosh apple. Varietal flavors of yellow peach, Asian spice, and honey suckle persist palate leaving a fresh, yet lingering finish.
CHARDONNAY (OAKED) 2018 | N.C. ($10/$27)
Fermented and aged in 2/3 new French oak barrels and 1/3 stainless tanks. Brilliant clarity and bright straw yellow color Bouguet is a blend of cream and citrus notes – accentuated by spring blossom, lemon sorbet, and graham cracker pie crust. Entry is soft on front of palate and tongue – giving way to mouth-filling apple, tangerine, vanilla, and nuanced oak flavors that linger on the finish.
CHARDONNAY 2017 | SONOMA ($10/$25)
Our 2017 Chardonnay reflects the Sonoma growing region to perfection, with layers of mandarin, Mayer lemon, and orange blossom in the nose. The palate shows some toasty vanilla and caramel notes from the time in barrel, with nice breadth across the palate. The finish is lingering showing more citrus notes.
COOPER'S TABLE WHITE WINE | N.C. ($10/$23)
Brilliant clarity with a bright yellow core. Exudes notes of clove, citrus zest, pine, and lemon drop and unfolds into a soft, fruit-forward mouthfeel accented with a hint of butter and pear toying with the midpalate. With some aeration, Cooper’s Table begs for a nice salty cheese to accompany the lengthy finish. Perfect match for a Fall afternoon or evening meal filled with fresh fruit, smoked fish, or roasted chicken.
